Avocado Egg Rolls are one of The Cheesecake Factory’s most beloved appetisers. Avocado, Sundried Tomatoes, Coriander, Onion and spices are combined and enveloped in a light pastry. Deep fried until golden and crisp, these gorgeous little morsels are perfect on their own or with your favourite dipping sauce – give it a go!

INGREDIENTS IN THIS DISH:

4 Avocados (diced)
1 Small Red Onion (diced)
1 Green Pepper (diced)
2 Tablespoons of Freshly Chopped Coriander (Cilantro)
125g of Sundried Tomatoes (sliced into strips)
1 – 2 Cloves of Garlic (crushed)
Salt and Pepper
1 Egg (lightly beaten)
Egg Roll (Spring Roll) Pastry Wrappers

Preparation Time: About 10 minutes
Cooking Time: About 2 -3 minutes per batch

MAKES ABOUT 30 SMALL EGG ROLLS OR ABOUT 15 – 20 LARGE EGG ROLLS
